This coffee comes from a number of small villages around Ywar Ngan and has been processed at Shwe Ywar Ngan using a honey process. The honey process allows the sticky mucilage that is left after the coffee has been pulped to dry onto the parchment coffee. This results in an exquisitely complex coffee, an explosion of molasses and forest fruits.
